Weekly Wish List

This week’s wishes are as follows. I wish…

  1. …to figure out when I am going to start my new job. After loads of applications, interviews, and rejections, I am happy to announce that I am finally moving into a new position at the University. The only problem is I still don’t know when that move is going to take place. My new boss is very generously offering to “share” me until things settle down around here (they just hired a new person, and are now going to have to replace me). But… I want to start my new job! If things don’t get figured out soon, I’m going to have to speak up and start fighting for myself… eek!
  2. …to start a much-anticipated journey to explore my faith. As Boyfriend and I talk more seriously about marriage, and as we have both felt for a long time that we want to grow closer to God as a couple, we have finally made a commitment to join a local church and begin the pre-marriage process at said church. We are both very excited, but it has brought up so many questions for me about faith and how I feel about the whole thing. I fully expect this to be a wonderful and fulfilling experience!
  3. …to spend some quality time with my passions. I don’t know what my deal is lately, but I have had little to no desire to do things that I care deeply about, specifically reading, writing, and baking. I’m not depressed or anything, I have just been spending my time on more pointless things, like television and the internet. Bad. But this blog post is a start in the right direction. And I am planning on making some apple bread this week. So I have high hopes for this one.

I feel like these are some pretty important wishes, so I will leave it at these three.

I have been meal planning and cooking a ton, but have, obviously, been very bad about posting recipes. In the meantime, here are some of the goodies Boyfriend and I have whipped up in the kitchen in the last week.

1] Black bean burger tostadas, recipe here, with homemade tortilla chips.

2] Spinach enchiladas that looked better than they tasted, with red cabbage slaw, recipe here.

3] Best granola in the world! Almond vanilla, with fresh fruit.

4] Prosciutto-wrapped chicken stuffed with herb ricotta, with champagne to celebrate my new job! Recipe here.
